Tagliatelle is one of the most famous and most popular pasta shape in the entire world.
They are very versatile and they can be eaten with many different sauces and ingredients.
In this digital pasta class you will be able to learn how to make tagliatelle from scratch, with or without the pasta machine.
All you need is a rolling pin or even any empty bottle of wine
(every excuse is good for a cheeky glass of wine :-)))
I will also teach you how to cook an easy and creamy sauce you can dress the tagliatelle with. I selected a light recipe that you will fall in love with on a summer evening.
This recipe can be modified according to your taste.
I suggested few ingredients as options then you can select your favourite ones. Please see below.
INGREDIENTS & SHOPPING LIST:
Pasta for 2 pax (if you want to increase the number of people just have more flour and eggs available and increase the ingredients for the sauce):
- 200gr of flour (preferably white 00 or fine semolina)
- 2 large eggs
For the sauce:
- 1 courgette (sliced in julienne style, I will show you on the day how to do it unless you have tools to help you with that)- - 1 onion or 3 spring onions
- 2 garlic cloves
- 300gr of uncooked peeled prawns (the frozen ones are perfectly fine) or roasted 150gr of chopped roasted ham if you don't like the prawns. (alternatively if you prefer a vegetarian meal you can substitute them with 200gr of mushrooms or peas)
- 150 gr of single cream (let's be healthier and buy the one with less fat even though I do prefer the double cream one)
- 1 lemon, organic or washed from wax because we will need both juice and peel)
- fresh parsley or mint as you prefer ( I usually use both for this recipe)
- salt and black pepper as you prefer
- half a cup of brandy or white wine (this isn't compulsory)
TOOLS REQUIRED:
- Knife & Fork
- 1 rolling pin or empty bottle of wine if you don't have a pasta machine
- Cling film
- Cutting board preferably wooden one
- 1 Cooking pot for the pasta and 1 Cooking pan for the sauce
- 1 big tray
- 1 scale (if you don't have it, don't worry I will tell you how to calculate the weight without the scale).
If you cannot get the ingredients to make the pasta or sauce, just let me know whatever you have sitting in your fridge/pantry and I will guide you through an alternative dish using what you have available.

But the best in my opinion will be a Greco di Tufo or Fiano but I usually struggle to find them 🙂
