Today I bring you to my region in Italy, called Campania, famous for the Napoletan pizza, the limoncello of the Amalfi Coast, the roman ruins of Pompei, the volcano Vesuvio, and of course many different delicious dishes. Between them, the Gnocchi with Potatoes are one of the most popular, soft and comforting, they are the perfect addition to your dinner parties to delight your guests.
INGREDIENTS & SHOPPING LIST:
Pasta for 4 pax:
- 1 egg
- 300gr of flour
(preferably white 00 or fine semolina, but any other flour you prefer will does the trick. I often use the strong white flour when I can't find the 00 but don't say it to Italians ;-)
- 1Kg of pre-boiled potatoes (they need to be very soft in order to mash them. Try to cook them few hours before so they can cool down before we start).
For the sauce:
- 1 tomato can (passata or chopped)
- 250gr of beef mince meat or 1 aubergine if you prefer a vegetarian meal.
- 1 small onion
- 1 garlic glove
- few basil leaves
- 2 balls of mozzarella cheese
- Parmesan cheese if you like it
- Salt and pepper
TOOLS:
- Knife & Fork

- 1 Cooking pot for the pasta
- 1 Cooking pot for the sauce
- 1 baking tray
- 1 tray
- a grater
- 1 scale (if you don't have it, don't worry I will tell you how to calculate the weight without the scale).
