If you are looking for a first course on Christmas day that will delight all your family members, young and old, then cannelloni with ricotta and spinach are just what is right for you.
This recipe is a timeless classic of the Italian cuisine, delicious and very easy to make. In addition you can prepare it in advance so that you can also dedicate yourself to something else during the streessful last days before Christmas, having in mind that your lunch is already sorted.
How amazing is that?
INGREDIENTS & SHOPPING LIST for 2 people (4 cannelloni each):
(please note if you want to cook this recipe for more people, you will need to calculate 1 egg plus 100gr of flour for each additional person, plus increase all the other ingredioents accordingly)
For the fresh pasta dough:
- 200gr of 00 flour or plain flour too (it would do the magic)
- 2 medium eggs
For the filling:
- 300gr of ricotta cheese from cow's milk
- 500gr of fresh spinach
- 1 medium egg
- 50gr of grated Parmesan cheese
- a pinch of nutmeg powder
- black pepper and salt to taste
- 1 garlic clove
For the sauce:
- 1 tomato can (400gr)
- 1 small onion
- olive oil
- few basil leaves
- 2 mozzarella balls
- grated parmesan cheese
Please note this recipe can also be made with Besciamella sauce (white sauce) as per your own personal taste.
In Italy the southern regions tend to use more the tomato based sauce, instead the northern regions use more the besciamella sauce.
I will explain you during the cooking class how to make the white sauce too if you prefer to use this variation.
In that case you will need to get the following ingredients:
- 1lt of milk
- 100gr of flour
- 100gr of butter
- a pinch of nutmeg
- salt and black pepper to taste
UTENSILS Required:
- a PASTA MACHINE is ideal to save time and effort, alternatively you can use a rolling pin, bearing in mind it will be more difficult and time consuming to get a thin layer of the dough;
- filler bag with nozzle (like the one to decorate cakes)
- 1 big bowl
- 1 grater
- clingfilm
- 1 chopping board
- 1 frying pan
- 1 big pot to boil water
- 1 small pot to cook the sauce
- a whisk, if you want to cook the white sauce
