Join our second Sunday vegan cook along with Melissa, an amateur chef who has been spending most of lockdown testing new vegan recipes and eating like a queen. She will be cooking a simple yet completely delicious meal that won’t break the bank. She has chosen an entree and a main perfect to be devoured solo or to impress your friends or loved ones. All cooking abilities welcome!
Tickets are £4, and just make sure you have the ingredients we’ll send you in the coming days. If you are allergic to anything, please feel free to substitute. We’ve vegan ingredients but if you want to use dairy, feel free.
Note: Serves 2 people.
STARTER: Red pepper schnitzel
Ingredients:
- 1 bulb of garlic
- 50 g plain flour
- 2 Romano peppers (long red peppers!)
- 1 tin of chickpeas OR 1 egg
- Breadcrumbs (panko if possible)
- Sunflower oil
- Paprika
- Chilli flakes*
- 1 lime
- Sumac*
- Salt
- Pepper
- Vegan (or not) mayonnaise
MAIN: Pulled Mushroom Tacos
Ingredients:
- 800g mushrooms (oyster preferable, but chestnut are fab too!)
- 2 cloves garlic
- Soy sauce
- Honey
- Olive oil
- Paprika
- Chilli flakes*
- Sumac*
- Powdered cumin
- Salt
- Pepper
- 1 red onion
- Vinegar (white wine or rice wine)
- 1 lime
- Avocado
- Small tortilla wraps
- Vegan (or not!) cream cheese
