Pride Month is the perfect time to honour not just the important historical events in the LGBTQ+ community, but also to remind our societies the importance of inclusion and equality, and at the same time fighting racism and discrimination.
Then, what better way to celebrate diversity than with a vibrant rainbow-colored pasta dish?

Rainbow Gnocchi pasta with sage and butter sauce is an easy dish to make; With a great look and lots of flavour it will be a guaranteed success on your table. Perfect for your date night or a dinner with friends and family members.

INGREDIENTS for 2 pax:
- 1 egg
- 150gr of flour (preferably white 00 or fine semolina, but any other flour you prefer will be fine too)
- 250gr of pre-boiled and mashed potatoes (they need to be very soft in order to mash them. Please make sure to cook them few hours in advance so they can cool down before we start the online class. Ideally they should be cooked with the skin so they absorb less water and they are easier to work with, while kneading the dough).
- 1 garlic glove
- sage leaves
- 1 spoon of butter
- 2 table spoons of Parmesan cheese
- black pepper and salt
- food colouring set kit (preferably in gel form)
UTENSILS REQUIRED:
- Knife & Fork
- Cling film
- Chopping board
- 1 Cooking pot for the pasta
- 1 Cooking frying pan for the sauce
- a grater
- 1 scale
- Gnocchi ridger (this isn't very important, if you don't have it you can use a fork to make a nice shape)
